(yes, a ship or aircraft can be arrested - and treated exactly as the many superyachts have been).
There is no route through either the Baltic or Black Seas that does not require entering the territorial waters of a NATO and/or EU member state, and use of their waters is subject to whatever conditions they wish to impose - like meeting current safety standards, carrying insurance from a recognised insurer with a record of paying out when required, or anything else as long as it is required of all vessels and not just those of particular flags. So all that is needed is for suitable shipping regulations to be imposed by those nations.

The real question is: how much LNG can Russia produce. The vast majority of their exports were via pipeline in the form of gas. Liquifying natural gas requires specialized facilities, and my understanding is that Russia has just about reached its production capacity. With Western sanctions they won't be building any more anytime soon. Probably an insignificant issue in the overall state of affairs.
